{Nourish} Strawberry and Cream Bars!

When the weather outside gets so overwhelmingly hot, I always find myself desperately in need of something cold, sweet, and refreshing. This is adapted from a Martha Stewart recipe, but can be tweaked to your liking however you want. If you want more fruit, by all means add more strawberries. And if you’re a whipped cream person, of course you can (and should) double the whipped cream recipe. (Note: another option is putting the frozen bars into your blender and creating a sort of slushy milkshake...yum!) Then don your cutest sunglasses, grab a blanket, and enjoy your summery treat outside in the sun!

For the base of the bars:

2 pounds of strawberries, halved and hulled
3/4 cup of sugar
Pinch of coarse salt

Puree in blender until smooth, and then pour into a 9x13 baking dish. Freeze for 2 hours, scraping the top every 30 minutes until the mixture is thick and slushy.

In another bowl, beat 3/4 cup of cold heavy cream, 2 tablespoons sugar, and 1 1/2 teaspoons of vanilla on high speed until stiff peaks form, about 1-2 minutes.

Pour whipped cream on top of strawberry base and smooth with a rubber spatula. Freeze until firm (about 3 to 4 hours) before cutting into squares, serving, and enjoy!
