{Nourish} Beautiful, Easy Baked Summer Fruits

My favorite colors are found in summer fruits. Deep plums, lusty peaches, sunset-esque nectarines. Mmm, it makes me hungry just thinking about them. They're gorgeous, delicious and, lucky for us, plentiful for the whole season. The best way to eat them, (other than freshly picked and with juice dripping down your chin) is by baking them. This is my most-used way to prepare all sorts of summer fruits. Baking brings out the sweetness, and the citrus keeps everything fresh. Serve over vanilla bean ice cream (the really good kind with speckles...you know what I'm talking about), yogurt, toast or just by the bowlful. This is a perfect treat to make for a casual dinner party or even bring to a summer picnic. Enjoy!

You will need:

18 medium sized fruits of choice. I used plums and nectarines, but anything will work.


Cinnamon sticks

Vanilla extract

1 orange

Preheat oven to 400 degrees.

Roughly half and pit all of your fruits, and lay them in a deep baking dish.

Drizzle about 2 tablespoons of vanilla extract overtop, add a generous shake of sugar and lay a few cinnamon sticks down.

Zest your orange, and spread evenly through the mixture, and then squeeze in the juice of the entire orange.

Give everything a rough stir, then pop the dish into your oven.

It should take about 45 minutes for everything to soften and caramelize properly.

Eat hot, cold, and on top of everything.
